Refinishing basement that was badly finished before and need to relocate electrical outlets and switches.

I recently was asked by my father if I could move back home for awhile to help him take care of my mother who has muscular dystrophy and my grandmother who's in her 80's. He offered for me to stay in the basement which was last finished back in the 60's or 70's and was done pretty poorly so I've decided to refinish it before moving in. I've tore down all the wood paneling and framing that was on the walls (1x2's glued to the walls with wood paneling that had nails and screw's of various size holding it all together.) Currently the electrical work has 4 wires which is split from the electrical in the bathroom located upstairs and wired to two light switches that turn off and on power to two electrical outlets with two plugs each, screwed into the supporting beams in unfinished ceiling above. There's also a pull string light that is connected to the electrical in one of the bedrooms upstairs.

What I would like to do is move the light switches and consolidate them into a single switch on another wall, remove the power outlets and reroute them to 2 overhead lights or 2 set's of track lights centered on both sides of the room and have them controlled by that switch while still connected to the wiring coming from the bathroom. I also want to add a power outlet to one of the walls that would not be connected to the light switch but would still be connected to the power coming from the bathroom and then remove the pull string light so I can wire another power outlet to the wire coming from the bedroom.

How can I avoid or test if I'll be overloading the circuit? What kind of wire should I be using? What are some good low power but high output lights? Items I should research before doing so? Do's and dont's?

I'm wanting to be very thorough about rewiring everything, I don't want someone 30 years from now wondering what the hell I was doing so any advice is greatly appreciated.

I don't have pictures of the wiring yet but can upload them the next time I go over to work on it, I'm working 10 hour days at work right now so It's not going quite as quick as I'd like. Here's some photos that should give a basic idea of what I'm doing and where the outlets are.
